Tender raw jackfruit, cut young, sun-dried in earthen barnis and slow-pickled until it turns deep and smoky-tangy with a genuinely meaty bite.
Katahal ka achar is a Bihar speciality that rarely leaves the state. Raw jackfruit has to be handled the same morning it is cut, and it takes longer to dry than mango, which is why most commercial pickle houses skip it entirely.
The texture is the point — dense and chewy, closer to a preserved vegetable than a relish.
What to eat it with
Roti and dal, or as a side with rice. It stands up well to plain, simple food.

Keep the jar in a cool, dark cupboard rather than the fridge, always use a dry spoon, and make sure the oil stays covering the pickle. Top up with plain mustard oil if the level drops.
