Bitter gourd, sliced and slow-cooked in mustard oil with a hand-ground spice blend. No sugar added to hide what it is.
Most karela pickles are sweetened to mask the bitterness. This one is not. The salt and the spices balance it instead, so the bitterness stays present but stops being aggressive — which is the point of eating karela at all.
It is the jar people either love immediately or leave alone.
What to eat it with
Dal-chawal, or with roti and a dry sabzi.

Keep the jar in a cool, dark cupboard rather than the fridge, always use a dry spoon, and make sure the oil stays covering the pickle. Top up with plain mustard oil if the level drops.
